This morning I whipped up the easiest batch of high protein gluten free pancakes—and my whole family loved them. These pancakes are fluffy, naturally sweet, and packed with protein to keep you full and energized. Best part? They come together in minutes in the blender with ingredients you probably already have on hand.

Easy, Gluten Free Blender Pancakes
Ingredients:
1 ripe banana
1 cup cottage cheese
1 cup oats
1 tbsp maple syrup
1 large egg
1/2 tsp baking powder
1 tsp vanilla extract
1/2 tsp cinnamon
butter for the fry pan and serving
Directions:
Place all ingredients into a blender and blend until combine.
Heat butter or oil in a large skillet until medium hot.
Pour batter into the skillet in desired amounts. Cook for 2-3 minutes per side, and flip. Cook for an additional 2-3 minutes.
Continue cooking in batches until all the batter is used, adding more butter/oil if needed.
