This hearty and comforting Autumn Chicken Stir Fry with tender and juicy chicken breasts, butternut squash, brussels sprout and spinach is not only filling and delicious, but you know you are getting a salad's worth of gut friendly veggies in there. The Brussels sprouts and squash get caramelized and sweet which balances out the earthy texture of the brown rice. This stir fry makes an excellent weeknight dinner and an even better lunch the following day!
